History is evident of the use of copper implements and wares including copper pots and pans. These pots and pans have been in used since ancient times and soon after human being discovered copper, he started making pots and pans out of it and their use is still there and is hoped to get continued in the future. As the history of vessels used for cooking purposes is concerned, there has been an immense requirement of them. Roasting was the first successful attempt in the process of making cooking utensils. There developed the art of making pottery and allowed humans to make such kind of vessels that could be fire proof and can be easily molded to any shape according to the requirement. Copper was the first metal to be used by human beings and the cooking utensils out of that were the first of this kind to be made by him.

The classical pots in the west were made of thick sheets of copper having inner layers made of tin. The best thing about copper pots and pans is that there is great amount of thermal conductivity provided by copper while cooking. Copper leads all the metals in this quality. Copper is easily reacted with the foods tat are acidic in nature. So as a remedy for this tin lining is provided to the cooking utensils made of copper as tin provides protection from reaction with foods that are acidic in nature. Some copper utensils may also contain lining of other metals as well. Copper pots and other utensils are expensive to buy and there is requirement of tinning after a certain period. Pans of copper are heavy to lift than pans made of other metals.

Now due to the presence of techniques of metallurgy that are modern and sophisticated, copper pans and pots come with spreading disks that are fitted on them by a technique known as cladding. Copper pans and other utensils also come with cladding of aluminum. The copper sheet is spread all over the pan or there may be an aluminums sheet that is covered over a copper pan. There are some cook wares that come with double cladding that is done with dual process. This enables a better functioning and better utilization as well.
